Brewing Instructions

  1. Divide the herbs into 2 equal portions. The osmanthus flowers are the tiny yellow petals—set these aside, as they will be added at the end.

  2. Quickly rinse the herbs under cool water to remove any surface dust. Rinse the osmanthus flowers separately and set them aside. Do not soak.

  3. Remove the pits from the red dates.

  4. Place one portion of the herbs (except the osmanthus flowers) into a pot with approximately 5 cups of water. Avoid using cast iron cookware.

  5. Bring to a boil, then reduce to low heat and simmer for approximately 40 minutes, or until about 2 cups remain.

  6. Turn off the heat and strain the tea, saving the herbs for a second brew. Add the reserved osmanthus flowers.

  7. If desired, sweeten with Chinese rock sugar or honey. If the flavor is too strong or sour, simply dilute with more water.

  8. Drink warm or at room temperature.

Second Brew

To get the most from your herbs, they can be brewed again. Add 3 cups of water to the used herbs and simmer until approximately 1 cup remains. You can continue brewing the herbs again for as long as they still have flavor.

Prefer a lighter tea? Instead of dividing the package into 2 portions, you can use 1/4 or 1/5 of each herb per brew and follow the same instructions above.
